Tea Category

 

We are surprised by the variety of tea and now there is a way which helps us to define it more easily. Tea has been breaking down into 6 categories based on the degree and the manner of “fermentation”. They are Green Tea, Black Tea ( Red Tea in Chinese), Oolong Tea, White Tea, Yellow Tea and Dark Tea. 

 

Green Tea: Long Jing Tea, Bi Louo Chun

 

Black Tea: Yunnan Mountain Black Tea, Alisan Black Tea

 

Oolong Tea: Dong Ding, Oriental Beauty Oolong, Bouchong, Phoenix Dancong, Phoenix Shuixian, Tieguanyin, Da Hong Pao

 

White Tea: Silver Needle (Baihao Yinzhen)

 

Yellow Tea: Huo Shan HuangYa Tea

 

Dark Tea: Puer, Anhua Black Tea, Liu Pao Tea

 

 

 

Nature of Tea

 

If you are new to tea tasting, it is quite confusing to search the best tea for yourself, your family and friends. The nature of teas give us some hints to pick the most suitable one to fit with our  body constitution. 

 

1. Green Tea: Cold Nature, with sweet aftertaste after Bitterness 

2. Black Tea: Warm Nature

3. Oolong Tea: Neutral

4. White Tea: Cold Nature

5. Yellow Tea: Sightly Cold Nature

6. Dark Tea: Warm Nature

 

 

What is Tea Fermentation?

 

Tea Fermentation is a key step in the tea manufacturing process which refers to the process that leaves enzymes oxidizing when microbes get in. It is a chemical reaction and causes the different taste of tea. It can be divided into a) Non-fermented and Very Light Fermentation, b) Semi-fermented, c) Fully-fermented

 

Simply to say, less oxidized tea will be more green and more oxidized tea will turn to more dark. Their taste will vary according to its fermentation level.

 
 

 

 

高山茶與平地茶的分別?

 

高山確實出好茶。高海拔地區擁有優質的氣侯環境,有利於茶葉的生長。

 

氣溫: 低溫、高濕度的氣候特徵使茶樹生長較緩慢,能保持茶葉的嫩度。而且高海拔容易產生雲霧天氣,會散射陽光中的藍紫光,增加茶樹氮代謝,有利於氨基酸、咖啡鹼、芳香物質的合成。

 

土壤: 多為石礫土,通透性好,有機質和各種礦物質營養元素含量高。

 

地理環境使茶湯的厚度和鮮爽度增強,濃澀味減輕。高山茶更為鮮爽甜醇,入口回甘。
